Amman - Jordan

As part of its ongoing efforts to enhance the efficiency of professionals working in the hotel sector and promote the implementation of the highest standards of food safety and hygiene within tourism establishments, the Jordan Hotels Association held a short training course on Monday, 11/05/2026, entitled “HACCP System & Food Safety.” The course was attended by a number of employees from hotels in the capital, Amman, and was delivered by trainer Sael Al Qasem.

The training aimed to raise awareness of food safety concepts and the application of the Hazard Analysis and Critical Control Points (HACCP) system within hotel operations, contributing to the provision of safe, high-quality food and enhancing guests’ confidence in the services offered by hotel establishments.

The course covered a range of key topics, including the principles of the HACCP system and its importance in preventing food-related hazards. It also addressed the different types of food contamination—physical, chemical, and biological—their sources, and the methods of controlling them throughout the various stages of food handling.

In addition, the training focused on the risks associated with the food preparation chain, starting from receiving and storage processes, through preparation and cooking, and ending with food service. Emphasis was placed on the importance of implementing Standard Operating Procedures (SOPs) to ensure compliance with approved standards.

The course also included topics related to employees’ personal hygiene, methods of preventing cross-contamination, best practices in cleaning and sanitization procedures, as well as internal monitoring mechanisms and the importance of continuous training for staff working in food and beverage departments.

At the conclusion of the course, emphasis was placed on the importance of implementing food safety checklists within hotel establishments to ensure accurate monitoring of all operational stages, contributing to improved quality standards and adherence to safety requirements.

The Jordan Hotels Association reaffirmed its commitment to continuing the implementation of specialized training programs targeting hotels across the Kingdom, with the aim of developing employees’ skills, enhancing operational efficiency, strengthening the competitiveness of Jordan’s tourism sector, and reinforcing food safety culture as a fundamental pillar of the hospitality industry.
